It's Been a While!
I have been gone for a while. I had a daughter get married in September and with all the planning of that and getting used to an empty nest it has just taken me a while to get things back on track. I am going to start posting again on a regular basis. I have been working on many hobbies as of late. Things like crocheting, cross stitching, painting and lots of sewing. I have opened my website again, www.jcarrelloriginals.com. I am very excited about that. I had been selling on Etsy for the past while and will also continue doing that.
I took a few pictures in the backyard today to share. Here in Southeast Texas we still have green grass, leaves on the trees, and of course mosquitos. What fun they are!
I also want to share a few pictures of my daughters wedding. She was so beautiful

Accidental Brittle
My husband was trying to make a caramel sauce for the baked apples he was making but accidentally made brittle instead. When I figured out what had happened I grabbed a can of roasted peanuts and threw some in. I then hurried and grabbed a cookie sheet and sprayed it with the nonstick spray. He hurried and poured it onto the cookie sheet and we waited a few minutes for it to harden. It was some of the best peanut brittle I have ever tasted and it was oh so easy. He didn't even use a candy thermometer. You just have to watch and when you notice that you can put a little on a fork or spoon and it hardens then you know it is ready. If you have ever made peanut brittle you will have no problem.
Accidental Brittle
1/2 Cup butter
1/2 Cup whipping cream
1 Cup sugar
Cook over medium heat to a medium to hard crack stage. Pour onto greased cookie sheet and let harden. Break into pieces.
